Honey Bee-Day Cake Recipe and feature!!

As promised in my Honey Bee-Day Party post, I bring you today the recipe of the cake I baked for the occasion.



Ingredients:

* 8 eggs (I know, but there is no butter...)
* 160g caster sugar
* 240ml milk
* 160g flour
* 140g walnuts chopped finely, almost to flour consistency
* 1 tablespoon of baking powder
* Butter or margarine for greasing the pan


1st Filling: (yes, there is more than one yummy filling..)

* 1 can condensed milk (do not use the half fat option as it does NOT work)
* 2 heaped tablespoons of dark cocoa powder


2nd filling:

* 1 can condensed milk (do not use the half fat option as it does NOT work)
* 200ml coconut milk
* 4 egg yolks (you'll use the white for the frosting, so DO NOT discard!)

Frosting:

The frosting is verry easy to work with, and does not need to be perfectly smooth, but need to be used quickly after making as it can go hard. You can decorate the cake the day before and place in the fridge, but the frosting looses its shine.

* Egg whites
* 160g caster sugar

How to make:

* Beat the eggs until double in volume using an electric whisk
*  Add sugar and beat some more
* Reduce the speed and add milk
* Turn the whisk off and mix the flour, nuts, and baking powder delicately as not to break the egg volume too much
* Pour into a greased  28 cm cake pan and bake at 200deg C for about 30 minute.
* take out of oven , let it cool down and reserve.

1st Filling:

* In a non-stick pan add the condensed milk and cocoa powder heat until well mixed and the mixture boils almost to a very thick custard consistency
* let it cool down an dplace in the fridge to help it set a bit

2nd Filling:

* In a pan mix all the ingredients for the 2nd filling and heat until it gets thick (about 1 minute) but take it off the heat and cool quickly, so you don't get scrambled eggs!

Frosting:

* Add sugar and about 80ml of water and boil until the sugar mixture leaves a thin trail when you pour it - Take a spoon to the mixture and let the mixture drop off the spoon. It's ready when the sugar leaves a thin, hardish trail. Do not let it colour!
* In the meantime, beat the egg whites until firm and slowly add the sugar syrup with the electric whisk still on!
* Keep beating until the pan is cool again to the touch

To assemble:

* Cut cake in 3 using a serrated knife
* Place filling 1 on the base of the cake, add a seconf layer of cake
* Add the 2nd filling and the ast cake piece
* Cover the entire cake in the white frosting, using a spatula
