Who said a frozen lolly is only for kids?!

If you follow me on Instagram, you'd have seen my sneak peek of today's post, where I played with some of my fave cocktails and summer beverages last weekend, to create THREE thirst-quenching frozen delights!  

3 Grown-up Frozen Lollipop Recipes

These are not your average sweet frozen treats, so they are most definitely aimed at grown ups taste-buds. They are playful, yes. But also look quite chic too, and so befitting of any summer soiree! ;)

They're easy to make too, and you can vary the tipple to suite your taste - the key here is to experiment and see what you like best, and combined it with refreshing, seasonal fruit and/or herbs for added pizazz.

Raspberry Fizz Frozen Lollipop Recipe - non-alcoholic

This flavor is really refreshing, not too sweet, and works well as a palate cleanser.
My husband LOVED it! :)

Directions:

Fill a popsicle mold with fresh or frozen raspberries. Top with sparkling lemonade. Set in the freezer until nearly all frozen (keep an eye on it - depending on the size of your mold, the lollies will set quicker. Mine took about 30 mins.). Let set fully before taking out of the molds - Run the molds under a tap of warm water to loosen them. Serve them on a tray or in cups.

Caipirinha Frozen Lollipop - alcoholic

Brazilian Caipirinha has to be one of my fave tipples EVER! So naturally I wanted to try it frozen. Alcohol won't freeze neat, so you need to add sugar to the mix. I used liquid sugar cane syrup instead of the more traditional granulated sugar (buy it from most supermarkets or liquor stores).

Directions:

Mix equal quantities of tonic and sugar cane syrup in a jug (enough to fill your molds). Add half a measure in volume of good quality Cachaça (you could substitute with white rum too for a Mojito twist!). Fill lolly molds with mint leaves and slices of lime. Top with the cocktail mix. 

Set in the freezer until nearly all frozen (keep an eye on it - depending on the size of your mold, the lollies will set quicker. Mine took about 30 mins.), then insert a popsicle stick in the center of each. Let set fully before taking out of the molds. Run the molds under a tap of warm water to loosen them. Serve them on a tray or in cups.

Muscat and Apricots Frozen Lollipops - alcoholic

We are lucky enough to have lots of peach and apricot trees growing in our garden, so this one was a given! Combined with sweet French Muscat wine, these turned out the best frozen lollipops I've ever had! They'd be the perfect way to end a summer wine-tasting party, don't you think?

Directions:

Mix 2 parts volume of Muscat with 1 part of sugar cane syrup, enough to fill your molds. But any left over can be drunk chilled, no waste! ;)

Fill shot glasses with slices peaches or apricots and top with the wine mixture. Set in the freezer until nearly all frozen (keep an eye on it - depending on the size of your mold, the lollies will set quicker. Mine took about 30 mins.), then insert a popsicle stick in the center of each. Let set fully before loosening the molds - Run the molds under a tap of warm water to loosen them.

The beauty here is that the pops are already in their little glasses, so makes it easier to serve and hold at dinner parties!
