I used to think that soups are reserved for winter months only. But my husband convinced me otherwise with some of his delicious spring soup flavors, like this gorgeous watercress soup that also happens to be gluten-free and vegan! Truth be told, I'm not really a soup kinda gal...but this watercress soup is so yummy (and my favorite of all!) that I had to share it here in the blog!
