Raspberry & Yogurt Ombré Popsicles Recipe

This super refreshing raspberry popsicle is all so creamy and feels really indulgent, despite being sugar-free!
It's great for any summer party and was a hit with the family!
I'm now thinking they also make the perfect back to school snack too :)
Raspberry & Yogurt Layered Ombré Popsicle Recipe
Ingredients: serves 6-8 depending on your popsicle mold size
* 250 g or 9oz of raspberries
* 50 ml water
* 375g or 13oz of vanilla yogurt
* Truvia® Natural Sweetener
1) Blend raspberries with water until smooth. Sieve and keep the juice.
Sweeten with 6 teaspoons of Truvia® Natural Sweetener. It may seem too sweet at first, but frozen
desserts tend to lose their sweetness once frozen, so you need to over compensate.
2) Take two thirds of the raspberry mixture and place in another bowl. Add 4 tablespoons
of yogurt and mix with a spoon to achieve a pale pink color. Sweeten with 6 teaspoons of Truvia® Natural Sweetener.
3) Place the remaining yogurt in separate bowl and sweeten with 6 teaspoons of Truvia® Natural Sweetener.
Now you should have 3 yummy layers for your ombré popsicles.

Now for the assembly of the Popsicle:
4) Add 1 layer of the dark raspberry puree into each Popsicle mold (about 1 tablespoon). Place in freezer until nearly frozen or slushy.
5) Add the pale pink raspberry layer on top (about 2 tablespoons), and insert the Popsicle stick into the center of each mold. Place back in the freezer until completely frozen.
6) Add the yogurt layer last, and place the molds back in the freezer until frozen and ready to serve.
Just before serving, run your popsicles under warm water to release from mold. Serve them as is or in individual shot glasses. SO pretty and perfectly practical for parties! :)
