Having a go-to crowd pleasing recipe for those impromptu celebrations and parties is something I can't recommend enough as a hostess.
You know, something quick, easy to make, and super delicious to serve that will be popular with any guest?! Yep, this is where this spiced Mexican-inspired cheese and onion dip comes in super handy!
This Mexican inspired dip can be served hot or cold. But hot is my all time favorite way because all the ingredients and flavors are allowed to melt and amalgamate together into a super tasty, bubbly hot pot of yummy goodness. 😍
My husband and kids are huge fans too, and I find myself making it for party snacks and appetizers alike. It's super practical too as you can make it a couple of days ahead of the party and just pop it under a hot grill just before serving.
This recipe is a twist on a classic British dish called Welsh rarebit (not rabbit). My husband makes this mean Welsh Rarebit, which is basically a posh cheese and onion topping for toast. But I had other ideas for it!
As a lover of spice and Mexican flavors, I added a spicy twist to the dip with fresh chilies, spring onions and smoked paprika, which turns out to be a match made in party-food heaven. The perfect way to serve it is alongside Breton Artisanal Sweet Potato and Ancient Grains!
Breton’s variety of flavors and textures make them the perfect crackers for simple appetizers or a delicious crust.They're also ideal to eat right out of the box (tried and tasted) - just be sure to leave some for your guests! 😋
Party Food | Spiced Mexican Cheese and Onion Dip
Ingredients - serves 6-8
* 2.5 cups of grated mature cheese (Cheddar and Gouda work well)
* 1 cup of light or low-cal mayonnaise
* 1 finely chopped spring onion (green parts and all)
* 2 chilies finely chopped
Directions:
1) Add all the ingredients into a bowl and mix with a spoon until well combined.
2) You can serve this dip cold, or place in the fridge until ready to serve.
3) Just before serving, place the dip in an oven-proof dish under a hot grill for 5 minutes or until golden and bubbly on top. Serve immediately with Breton Artisanal Sweet Potato and Ancient Grains on the side.
