Pumpkin Spice Cupcakes & Easiest Cream Cheese Frosting EVER!
Fall is here. And we all know fall is synonymous with wonderful produce, like pumpkins. And in turn, you can't bake anything with pumpkins without pumpkin spice, right?! From cakes to lattes, to puddings and cupcakes (my favs!), this seasonal spice mix is everywhere!
Baking is also a must for me this season. The house gets filled with wonderful aromas of baked goods, intoxicating spices that make us feel all cozy and warm, inside and out. Come to think of it, I think fall is my favorite season of all. Mostly because of all the baking that goes on, I have to admit!
And one of the best ways to get immersed into the seasonality of it all, are these scrumptious, but oh-so-easy-to-make Pumpkin Spice Cupcakes.
So I baked a tasty batch earlier in the week. And man, they are heavenly! These cupcakes make for super tasty dessert, think Thanksgiving, Halloween treats, school bake sale...but also great afternoon snacks with a cup of steaming coffee or tea!

The decorating of any cakes, cupcakes or baked goods IS the most fun part for me, and these Pastry Bags are the perfect solution to my fall baking. They certainly turn the fun factor right up, I tell ya!

For my Pumpkin Spice Cupcakes I chose the Cream Cheese filled Pastry Bags, since cream cheese frosting marries super well with the pumpkin spice flavors.

Pumpkin Spice Cupcake Recipe with Easy Cream Cheese Frosting
Ingredients: makes 24 cupcakes1 ¾ cup pumpkin puree from a can (or boil some pumpkin chunks for about 20 minutes with skins on, then cool, peel and make puree in a food processor)
3 ¼ cup flour
1 cup flavorless vegetable oil (like sunflower)
2 tsp baking powder
½ baking soda
4 eggs
4 tsp of pumpkin spice
½ tsp salt
2 ¾ cup white sugar
For the cream Cheese Frosting:
16 oz. Pillsbury™ Filled Pastry Bag in Cream Cheese flavor
Preheat your over to 350 degrees F or 200 degrees C. Line a baking sheet with sturdy cupcake baking cups.
In a large bowl, whisk all the dry ingredients together (except the sugar) until combined. Set aside.
In another bowl, whisk together sugar and oil until well combined. Then add one egg at a time, whisking well after each addition.
Add the flour a little at a time to the sugar/egg mixture and whisk until fully combined. Add the pumpkin puree and whisk again.
Fill the baking cups ¾ full and bake for about 12 minutes. Turn the cupcake tray around to bake evenly, and bake for a further 5 minutes or until a toothpick comes out clean when inserted into the middle of the cupcakes.
Let the cupcakes cool on a wire rack.
When cooled, frost the cupcakes with the Pillsbury Filled Pastry Bag frosting in Cream Cheese flavor, and sprinkle a little pumpkin spice on top. YUM!
