Apple and Frangipane Tart Recipe
Frangipane is an almond based French cream. Now that we've got the vocabulary lesson out the way, let's move on to the cooking, shall we?! 😉
This delicious apple and frangipane tart is the bom diggity of tarts, and it's one of my favorite recipes to make this time of year, especially for Thanksgiving as you saw in my Boho Chic post here!
With a creamy, almond filling and pretty slices of apples on top it looks good enough to eat! No but seriously, can we take a minute to appreciate how pretty it also looks?
Huge bonus that it's SO easy to make, even kids can help! (I made a crust-less version of this pie with my mini me on Instagram last week, did you see?) 😍
So basically, for a crust-free version (photo below) you simply tripple the filling measurements and skip the pastry case altogether. So it's a lighter version of the pie, but totally yummy too!

And if you top them with my favorite nuts of all time, pecans, and you have a gorgeous-looking pie to impress your guests this Thanksgiving, or a super yummy dessert any time from now 'til the New Year!

Apple and Frangipane Tart Recipe
Ingredients: Serves 6-8
* 200 g or 7 oz plain flour, plus extra for dusting
* 200 g or 7 oz soft butter, plus extra for greasing
* pinch of salt
* 100 g or 4 oz caster sugar, plus 1 tbsp
* 2 large eggs
* 100 g ground almonds
* 1 tsp of vanilla extract
* 4 medium eating apples, cored, peeled and sliced thinly
* 1 tbsp smooth apricot jam, melted
* pecan nuts for decor
Directions:
1) Make the short-crust pastry:
* Sift the flour and salt into a bowl and add half of the cold butter into it.
* Rub the butter into the flour with your fingertips until it resembles breadcrumbs.
* Stir in 1-3 tbsp cold water with a knife until the dough seems to want to cling together.
* Knead lightly to make a ball, and then refrigerate for 30 minutes covered in cling film wrap.
2) Bake the pastry case:
* Preheat the oven to 180°C or 356°F, gas mark 4.
* Generously butter a 24 cm or 10 inch diameter round baking tin with a removable base and dust with flour.
* Roll out the pastry to about 1/2 cm or 1/4 inch thick and line the tin.
* Trim the edges with a sharp knife. Cover with foil and fill with baking or dried beans.
* Bake for 10 minutes. Remove the foil, and bake for 5 minutes more.
* Let pastry case thoroughly cool down before using.

3) Make the apple and frangipane pie filling:
* In a large bowl, beat together the remaining butter and half the sugar until light and fluffy.
* Beat in one egg at a time, than add vanilla.
* Fold in the almonds.
4) Assemble and bake your pie:
* Fill the cooled pastry case with this mixture.
* Place apple slices onto the mixture in whatever pretty pattern you fancy.
* Melt a little of butter and brush the apples, the sprinkle on some caster sugar on top.
* Bake for 40-45 minutes, until the frangipane is puffy and golden and the apples just cooked.
5) Time to eat!
* Brush the top of the tart with melted apricot jam (place jam in the microwave for 30 secs. to melt).
* When cooled, add the pecan nuts as decor on top of the tart.
HOSTESS TIPS: This pie is best served lukewarm. If you bake it ahead, then you can re-heat the slices it in the microwave for 30 seconds and serve topped with ice cream. YUM!
