No-Bake Raspberry Cheesecake Parfaits Recipe
Valentine's Day is 'round the corner, and if you need a simple, yet totally delicious (not to mention adorable-looking) dessert, then we have your back, girlfriend!
We added a raspberry note to this tasty parfait to counterbalance the sweetness going on with the delicious cinnamon-flavored cookie crumb layer and the Irish Cream liqueur cheesecake filling!
Oh, and did I mention it's also a NO-BAKE dessert? Talk about the perfect love day recipe, right?! 😍
This cheesecake parfait recipe is a kind of a melange of all of my favorite flavors. But you could totally make this recipe you own by varying the ingredients.
For instance, you could skip the Irish Cream liqueur and add some vanilla or finely chopped mint to the cheesecake layer.
Or add a layer of Dulce de Leche or chocolate spread or fresh fruit pieces, instead of raspberry jam on top of the cookie crumb layer.
Or you could use chocolate-chip cookies instead of the cinnamon ones.
OR, you could drizzle the top with chocolate sauce or caramel or a dusting of cocoa powder for a decadent version. Nothing wrong with that, huh?!
That's the beauty of no-bake parfait, I guess. There's no limit to the combination of flavors that you can achieve to suit your event, taste or what's in season.
Plus, it's so easy and quick to make, that you could totally solicit the help of the kids if you have some around. Win, win, win! 😉
But because I made these for a Valentine's Day party, of course I had to have colorful pink and red sugar sprinkles and chocolate hearts to make the whole dessert a little more festive!
No-Bake Raspberry Cheesecake Parfaits Recipe
Ingredients: Serves 6-8
* 500 g (18 oz) Mascarpone cheese
* 1/2 cup of icing (confectioner's) sugar sifted
* 50 ml (1 shot) of Irish Cream liqueur
* 300 g of cinnamon-flavored cookies crumbed up (blitz them in a food processor or blender)
* 1/4 cup melted butter
* 100 g (4 oz) of raspberry jam (heated in the microwave for 30 second until soft enough to pour)
* fresh raspberries for decor
* chocolate hearts for decor
* sugar sprinkles for decor
1) Make the cheesecake layer: In a bowl add Mascarpone cheese, liqueur and sugar. Whisk until combined. Place in a piping bag fitted with a start nozzle if you wish to make it easier to add to the parfait glasses (a zip-lock bag would work too).
2) Make the cookie layer: Add your cookie crumbs and melted butter to a bowl and mix until combined. The mixture should resemble wet sand. Set aside.
3) Decorate your parfait glasses: Dip the rim of the glasses (I used shot glasses) in a little water, then dip them immediately into a bowl of sugar sprinkles. Shake off excess and they're ready to be used.
4) Assemble the parfaits: Add a couple of teaspoons of cookie crumb to the bottom of the parfait glasses. You may want to add a little more or less, depending on how tall your glasses are.
5) Add a teaspoon of raspberry jam on top.
6) Pipe in the cheesecake mixture, filling the glasses to the top.
This dessert can be made up to two days in advance and refrigerated until you're ready to serve it.
