Strawberry Cupcakes & DIY Fondant Strawberry Toppers
I made these cuties for a mini strawberry themed desserts table I styled recently. And since it's strawberry season (even if the sun refuses to come out...), I'll be sharing my strawberry themed party recipes with you all this week in the hope to kick start the summer good and proper!!
Anyways, it all turned out pretty yummy and cute too, don't you think? So it's good to know that if I can, you most certainly can too! ;)
How to Make Strawberry Sugar Paste Fondant Toppers
Ingredients:
* Red and Green Sugar Paste Fondant
* Small star cookie cutter
* Toothpick
* Water and little kitchen paintbrush
* Fondant Ball Tool - or any poky thing (end of paintbrush, clean for instance)
Directions:
Make a ball our of red fondant. Slightly squash one end with fingertips to get a strawberry shape. Using a toothpick, prick lots of little holes all over the strawberry. Cut out a star shape from green fondant, using the cookie cutter. Paint a little water and attach the green star tot he red base.
Using the ball tool, push it into the strawberry and make a small hole. this is where the stalk will sit.
Make a little sausage shape with a bit of green fondant and stick into the hole. let strawberry dry and the use to decorate cakes or cupcakes!
Vanilla Cupcake Recipe
I used this recipe here, and scooped out my batter into cupcake cases.
Strawberry Flavored Cream Cheese Cupcake Frosting
Ingredients:
* 1/2 cup softened butter
* 3 oz plain cream cheese (at room temperature)
* 2 cups sifted icing/confectioner sugar
* 2-3 drops Strawberry Extract Oil
* Pink Gel/Paste Coloring - From most baking supply stores or online
* Sugar paste fondant strawberries for decor
Directions:
In a mixer with paddle attachment, cream together butter and cream cheese - by hand is fine too, and means you get no bingo-wings! ;)
Gradually add icing sugar beating until well combined. Add strawberry extract and mix. Now color your icing with a little pink gel food coloring. I use a toothpick to add a little at a time and mix until combined - You may find you need a bit more icing sugar to get it to a firmer piping consistency. Frosting will go darken as it sets, so bear that in mind when adding color.
Then all you have to do is pipe using a large open star tip onto your cooled cupcakes, and top it off with a fondant strawberry.
