Pineapple Rum Sangria Recipe
There's nothing we love more 'round here than a great summer cocktail! But when you have a small crowd to serve, making individual cocktails can be a little too taxing in the summer heat.
So all the big-batch cocktails like this Pineapple Rum Sangria, get my vote every summer! It's perfect for entertaining this time of year, not to mention that it's super easy to make and tastes like tropical paradise in a glass!
Pineapple Rum Sangria Recipe
Serves 4-6
Ingredients:
* 1 pineapple, peeled and cut into chunks
* 2 cups of water
* 1 cup white wine
* coconut sugar to taste
* 1 cup white rum
* juice of 1 lemon
* 1 cup soda water or club soda (works great with ginger ale or sparkling lemonade too)
Directions:
1) In a blender, mix half the pineapple chunks with 2 cups of water. Strain through a fine sieve and place in a punch bowl. Sweeten to taste with the coconut sugar.
2) To the bowl add white wine, rum, the remaining chunks of pineapple and the club soda. Mix and serve chilled over ice, garnished with pineapple chunks if desired and glasses rimmed with a little coconut sugar!
