Everyone is always on the quest to eat healthier and make balanced foods choices, but between running a business, home duties and taking care of my family, it's not always easy to make these choices happen, let's be honest!

SO many boxes to tick for one humble meal, right?! :)
These are basically 5 things that I look for in my lunches, to ensure lunchtime is also a meal that I enjoy! So I tend to choose a protein dish accompanied by a salad, soup and/or a veggie dip.

Speedy & Smokey Chunky Tomato Salsa Recipe

Ingredients: serves 4
Ingredients: serves 4
* 400g can of chopped tomatoes
* 1 tablespoon olive oil
* 1 tablespoon garlic (frozen is quicker)
* salt & peper to taste
* 1 tb spoon frozen herbs chopped
* 1 teaspoon smoked paprika
* Optional: 1 tbspoons of tomato ketchup
Directions:
Place oil and garlic in a sauce pan and fry over medium heat for a couple of minutes until garlic is soft and lightly golden. Add tomatoes and cook on low to medium heat for about 5 minutes. Add the tomato ketchup if using, seasoning and herbs. Use a hand blender or mixer to blitz the mixture into a thick salsa.
Balanced lunch serving suggestion: For a tasty satisfying dose of protein, I serve the salad and salsa with Lean Pocket ( I love their pretzel bread!) , which also have have 100% real cheese inside (yum!) and no artificial flavors.
Fresh Peach & Mint Salad Bowl Recipe

Ingredients:
* iceberg or romaine lettuce cut into strips
* tomatoes cut into segments
* peaches cut into segments
* chopped mint leaves
* 2 tablespoons of olive oil
* 2 tablespoons of white wine vinegar
* salt & pepper to taste
Directions:
Cut all the salad ingredients and arrange into a platter or bowl in a pleasing manner. There are no rules!
For the dressing, combine the olive oil, vinegar, herb and seasoning into a clean jam jar with a lid. Shake the jar and pour onto the salad.
