Party Food | Brazilian Kibbe Croquettes Appetizer Recipe
On with our Brazilian food week, today I bring you an easy to make savory appetizer that also packs a ton of flavor!
Kibbe (also kibe or kibbeh) originally a Middle-Eastern dish brought to Brazil by immigrants, but now it's been thoroughly embedded in Brazilian culture and cuisine, so you always find at parties, bars, restaurants...it's become one of their most popular dishes!
And it's a perfect appetizer or snack when you're watching the Olympic Games in Rio this year! ;)
Of course, Kibbe is also ideal for a dinner party starter course or a hearty snack served with a side salad. I love to serve a Sriracha spicy mayonnaise and lemon wedges alongside it, and sprinkle some coarse sea salt on top. YUM!
In Brazil they also have a cool variation where they stuff cheese inside the croquettes before they fry them. Which I'm SO trying next time I make these ;)
Party Food | Brazilian Kibbe Croquettes Appetizer Recipe
Ingredients: Makes 15-18 Kibbe croquettes* 500 g (1 lb) of lean minced beef (20% fat)
* 250g (1/2 lb) bulgur wheat (in most health food stores)
* 1 large onion
* 1/2 cup of mint leaves
* 1/2 cup parsley
* 1/4 teaspoon ground cumin
* 1/4 teaspoon cinnamon
* 1/4 teaspoon ground nutmeg
* 1/2 teaspoon ground black pepper
* coarse seas salt and mint leaves for garnish
