French Salted Caramel and Chocolate Tart Recipe
This French salted caramel and chocolate tart is the perfect dessert for Valentine's Day or any other occasion when you need your chocolate fix, but don't want to spend ages in the kitchen!
This tart is my own spin on the classic French tarte au chocolat, and is SO quick and easy to make and only requires a few store-cupboard ingredients, with very minimal baking involved! Not to mention that it tastes mega delicious and looks oh-so pretty too!
French Salted Caramel and Chocolate Tart Recipe
This salted caramel and chocolate tart came about as a happy accident. I am rather an impatient person, and when I decided to make this tart, I only had frozen pastry, which I defrosted rather quickly on top of a hot stove (I do NOT recommend this method though).
Long story short, the pastry shrunk in the oven, so I had some unsightly and unfortunate holes on the bottom of my pastry. To fix my dilemma, I decided to make a semi-soft caramel to add to the bottom of the pastry before adding the chocolate ganache. The idea was that the caramel would harden and seal he holes, before adding the soft ganache.
The caramel helped to seal the holes indeed, and added a layer of extra sweetness so I could forego the extra sugar in the ganache mixture. It also added an extra texture and upped the ante on the yummy factor of this tart, in my opinion.
The famous Tarte Tatin, another French culinary delight, which was born out of a happy accident, is now known world over. So I'm not at all ashamed to confess to you how my chocolate and salted caramel tart came about! 😁
Hopefully, it comes to show that even mistakes in the kitchen can sometimes yield something even better than we had intended, so don't be afraid to experiment with flavors and add your own touch to a classic recipe to make it your own. Or to fix a little crack here and there 😆
To save time, you can also use caramel that you buy in the store, or switch things up a bit and use Dulce de Leche or even some fruit preserve instead of the caramel!
The classic French chocolate tart recipe I used was inspired by a simple chocolate tart recipe by Jamie Oliver, which I modified slightly. The tart should cut like butter due to the smooth ganache filling, and this is what I love about this dessert. It's truffle-like luxurious filling has a texture that's so rich and has a really sophisticated flavor profile for such a simple dish!
You can totally add other flavorings to the ganache like Irish Cream, Grand Marnier, orange blossom water, Kirsch, etc.; or other toppings to the tart itself like berries, caramelized nuts, preserved fruits, orange slices, melted chocolate, or simply dust on top with dark cocoa powder for the classic look.
I serve this tart on its own or alongside ice cream, cream or English custard 'cause my kids love it that way!

French Salted Caramel and Chocolate Tart Recipe - quick, easy and delicious tarte dessert recipe to make for Valentine's Day or any other celebration!
Ingredients
- Short-crust pastry (store-bought or homemade)
- 400 g (14 oz.) dark chocolate 50% cocoa
- 300 ml (10 fl. oz.) double cream
- 90 g (3 oz.) salted butter
Salted Caramel
- 1 cup brown sugar
- 1/2 cup salted butter
- 1 teaspoon vanilla extract
Instructions
- Blind bake the pastry at 200 deg. Celsius or 392 F. until golden brown for about 10-12. Let pastry cool completely.
- Meanwhile make the caramel: Add sugar and butter to a sauce pan and bring to a boil for about 2 minutes. Remove from the heat and add in the vanilla. Let is cool slightly until a little thicker.
- When the pastry is cooled down, add your caramel on top and let it cool down a bit. (It won't set completely hard, but it will get harder as it cools).
- Make the ganache filling: Add chocolate pieces into a microwavable bowl along with the butter and melt at 30 second intervals, stirring until fully melted.
- Remove from the microwave and add the cream.
- Whisk vigorously until combined and chocolate is completely melted. If needed, return to the microwave for a further 30 seconds to ensure a smooth mixture.
- Add the ganache on top of the caramel.
- Place the tart in the fridge to set for at least 2 hours.
- Dust with cocoa powder before serving.
