This one's perfect for your 4th of July celebrations coming up, so we're bang on trend, right?!
These pie pops are so fun and easy to make. And even more fun to eat! I made them with tasty cherries, but you also use other seasonal fruit or filling to match your party.
The trick to making these pie pops easy, is to use ready-rolled, shop-bought puff pastry. If it's good enough for the likes of chef Jamie Oliver, than it's good enough for me!
No-one actually has time to make their own perfect puff pastry, do they?! I've tried once and then realized I like life more... So shop-bought it is. Every, single, time. #noshame
The tasty, all-butter puff pastry is what I used in this recipes, but I've also tried shortcrust pastry and it gives a nice shell too; not to mention a "neater" looking pie when it comes out of the oven.
But I like the flavor of the puff, all crispy-like. AND the all-butter taste of the crumbling pastry mixed with the sweet, gooey cherry filling... Drooling yet?
Be sure to work with any pastry cold from the fridge, especially in hot summer months. Otherwise, you may get in a sticky mess, and lose the will to live. True story...
Anyways, let's get baking, shall we?!
Oh, and I made a quick video to show you the steps (quick to watch, but it actually took me a whole day to shoot and edit, ha!).
Cherry Pie Pops Recipe
Cherry pie filling - for 9-12 pops
* 350 g pitted cherries
* 200 ml cherry juice
* 150 g sugar
* 2 teaspoons corn starch
* 1 shot Kirsch (optional)
Pie crust:
* puff pastry rolled
* egg wash
* cooled cherry pie filling (from above recipe)
1) Make cherry pie filling filling: Add cherries, sugar, corn starch and juice to a pan and bring to the boil until thickened and the juices are halved.
2) Add a shot of Kirsch (optional) and simmer for 5 minutes. take off the heat and let I cool down completely.
3) Cut 2 identical 2 inch round circles of pastry with a cookie cutter. On half of the circles, cut out a little star 'window'.
4) Lay your pastry circles onto a parchment lined baking sheet. Press a lollipop stick onto the base of the circles.
5) Add your cold cherry pie filling to the center. Don't overfill. Close the pops with another pastry circle.
6) Crimp the edges with a fork and brush lightly with egg wash. Bake at 200 deg C for about minutes.
Serve warm or cold.
TIP: The cherry pie filling and its juices also makes great topping for cakes and ice creams!
