When it comes to going back to school, lunch ideas are at the forefront of my to-do list! Mainly because as a mom, I want to provide variety and fun in my kids lunchboxes and give them something practical, nutritious, tasty and comforting that they can look forward to each day.

But with busy lives and crazy morning routines, it's not always easy to come up with lunch ideas and recipes that tick all the above boxes!

So I try to inject a little creativity in all the school lunch meals I prepare. However simple they may be, there's something so much more special on how you package and present them, right?!. After all, we eat with our eyes first!

As with most kids, one of my kids favorite sandwiches, is the Peanut Butter and Jelly. I use Jif® Creamy Peanut Butter and Smucker’s® Strawberry Jam, which you can buy at Walmart in-store or online. My kids love the combination of flavors and textures of the two together, and I love how a great PB&J sandwich can Power Their Day!

So to make the classic Peanut Butter and Jelly Sandwich a little more special, I cut the crusts off their the bread for instance, or add a little note, joke or riddle to accompany their favorite school lunch.

You can download some of the lunchbox note cards, riddles and jokes I use below. There are some for girls, some for boys and some blank ones too so you can also write your own personal message for your kids!

To download your lunchbox note cards, simply click here. Then print them onto white A4 size cardstock or label paper. Hand write a personal message or stick them directly to your kid's lunchboxes. Easy and super cute!

When I have time, I like to use cookie cutters to cut fun shapes out of their fav sandwiches. Though my son is already in junior high school, these little touches don't go unnoticed, believe it or not! Even my husband appreciates the little notes that accompany his lunch. Ha!

Making the Perfect PB&J Sandwich for School Lunches

What you'll need:

* crusty white or whole wheat sliced bread
* cookie cutters
* printable lunchbox note cards – download yours here

Directions:

1) Start by removing the crusts of two slices of bread with a serrated knife.
2) Apply a generous amount of Jif® Creamy Peanut Butter to both slices of bread.
3) Apply a tablespoon of Smucker's® Strawberry Jam to the center of one of the bread slice and spread evenly.
4) Close the sandwich with another slice of bread and press down.
5) Use your cookie cutters to make fun shapes if desired.
6) Print the lunchbox notes onto white cardstock or label paper and cut. Stick the card to the lunchbox and voila!

To recreate the perfect, creamiest peanut butter and jelly sandwich you can get the Jif® Creamy Peanut Butter 40oz. And Smucker’s® Strawberry Jam 32 oz. at Walmart in-store or online

I like the 40 oz. big jars as they're perfect staples to have in my kitchen pantry for those busy school mornings when we're pushed for time to make intricate lunchbox meals. My kids also sometimes help to make their own Peanut Butter and Jelly Sandwiches for school lunches, which is a huge help! The fact it's an easy school lunch that everyone enjoys is also a bonus if you have fussy eaters at home.

To package the sandwiches I like to use brown parchment paper or paper bags tied up with colorful baker's twine, and adorned with a cute printable note card. So beyond adorable, right?! But you could totally use plastic bags or containers too if pushed for time and stick the cute lunchbox notes on top!

Then just add some fruit, juice or milk to their lunchboxes and you have a perfectly tasty, fun lunch that the kids are sure to love!
