How To Make an Easy Rainbow Cake
Hands up if you love rainbows!
It's the perfect theme for parties at this time of year, don't you think? This rainbow cake is gender-neutral and offers such a fun color palette for so many occasions and celebrations!
So whether you're planning your child's birthday party, a baby shower or spring event, I'm showing you today how to bake and decorate a rainbow cake to adorn your party or dessert table with this colorful theme!
For this post I've teamed up with Welch’s Fruit Rolls for a simple way to decorate my cake, but also to inject a delicious taste the whole family will love!
Welch’s Fruit Rolls come in a fun to eat format and are my go-to snacks for my kids’ lunchboxes, mainly because they have 100% daily value of Vitamin C, 25% daily value of Vitamins A & E, and fruit is the first ingredient!
So I thought it would be cool to “Unroll the Fun” myself, and use them as part of my rainbow cake decorating!

But as with most of my cooking/baking, I like to simplify the steps if I can to make life easier and infinitely more fun in the kitchen!
For this rainbow cake for instance, I've not only used the Welch’s Fruit Rolls as a decor element, I also used ready-to-bake cake box mixes that speed up the whole cake-making process.

Rainbow Cake Recipe
Cake Ingredients:
* 3 vanilla cake box mixes + ingredients listed on your cake box (for me it was eggs and cream)* Gel food coloring in rainbow colors (red, orange, yellow, green, blue and violet)
Cake-Decorating and Frosting Ingredients and Materials:
* 2 Boxes of Welch’s Fruit Rolls, berry flavor* 2 Batches of vanilla cream cheese frosting (recipe below)
* Mini round paper punches, scissors, string and wooden skewers
Vanilla Cream Cheese Frosting Recipe
Ingredients: double the recipe for a tall cake
* 250g or 9 oz of soft cream cheese* 100 g or 4 oz soft unsalted butter
* 400 g or 14 oz sifted confectioner's sugar or icing sugar
* 1 tbsp vanilla bean paste
Directions for the cake:
1) Mix the ingredients for each cake according to your box instructions.2) Divide the cake mixture into two bowls and add a little of the gel food colors to each bowl to get the rainbow colors.
3) Mix until the colors are fully combined. Adjust colors if desired. Repeat for the two other cake boxes.
4) Add cake batter to six greased and lined 20 cm or 8 inch round cake pans. Bake the cakes according to packet instructions.
5) Let the cakes cool down in their baking pans and then freeze for about 10 minutes to make it easier to cut. Level out each cake layer with a serrated knife. Set in the fridge until ready to frost.
6) Stack the cake layers together and sandwich in place with some frosting in between the layers, starting with lilac on the bottom and finishing with red cake layer on top.
Directions for the frosting:
1) In a mixer fitted with the paddle attachment, add the butter and cream cheese. Cream together until combined. Add vanilla and mix.2) Slowly add the icing or confectioner's sugar to the mixer on low, and mix until combined.
Directions for cake-decorating:
1) Frost the outside of the cake first with a crumb coating. Freeze for about 10 minutes or refrigerate overnight to make it easier to apply the second coat of frosting.2) Add a second frosting layer to the cake.
3) While the frosting is still soft, add the layers of Welch’s Fruit Rolls to cover the sides of the cake, slightly overlapping each layer on the vertical sense. Use scissors to trim the excess at the top so all the fruit rolls are the same size.
4) Use a piece of string and press a little piece of fruit roll on the top to make your bunting. Use scissors to size and trim the mini flags. Attach the finished bunting to two wooden skewers ready to be inserted into the cake top.
5) Using your mini paper punches, punch out edible confetti from the fruit rolls to decorate the top of your cake.
6) Add your edible bunting and confetti to the cake to finish the look.
