Raspberry Mojito Cocktail Recipe
As you probably saw in my last post, that the Mojito is my favorite cocktail of all time! I especially love concocting fruity versions of this much-loved beverage for all my summer parties, like Cinco de Mayo, which is just 'round the corner.
One fruit version that is a a real hit with everyone, and that looks SO SO pretty, is the raspberry Mojito. Which I'm very happy to be sharing with you today. Least of all, because I get to make Mojitos on a weekday, and get to taste-test it for you! 😋
This raspberry Mojito cocktail is super easy to make, which is ideal for those cheeky 5 o' clock cocktails 😉
But you can also easily double, triple, quadruple the recipe, or make a really large batch in a pitcher to serve a crowd at your next party or Cinco de Mayo celebrations!
Raspberry Mojito Cocktail Recipe
Ingredients: For 1 person
You can double or trippple etc
* 1/2 lime cut into chunks
* 1-2 tablespoons raspberries - I like to use frozen raspberries
* 1 tablespoons mint leaves
* 1 tablespoon sugar or skinny version like sucralose
* 1 shot of light rum
* 1 cup club soda
* Ice

Directions:
1) For each cocktail, muddle 1/2 lime, raspberries, mint leaves and sugar in a sturdy-bottomed glass.
3) Add ice and garnish with remaining lime wedges and extra mint leaves.
