Rainbow Cookie Cake Recipe
Cookie cakes have become my go-to dessert "centerpiece" for any festive occasion. Mainly due to their easy-to-make nature and the amount of fun they bring to any party table!
Don't get me wrong, I love cake. But cookie cakes combine the best of the cookie AND cake world in one simple recipe! Hence my current obsession.
Rainbow Cookie Cake Recipe
So for saint Patrick's Day, I thought I'd attempt to make a rainbow cookie cake.How fun and colorful does this rainbow cake look?! I'm thinking it would be also perfect for a rainbow themed birthday party or even a unicorn themed shindig. What do you think?
The only major difference is that I used really thin or slim, smaller candy to decorate the top.
I mean, you could even make life even easier and use a store-bought frosting. Nothing wrong with that either.

Rainbow Cookie Cake
Rainbow Cookie Cake Recipe - and easy to make, super fun dessert for birthday parties,for a Saint Patrick's Day celebration or unicorn birthday!
ingredients
Cookie Dough
- 2 cups room temperature butter
- 3 cups sifted icing or confectioner's sugar
- 3 teaspoons vanilla extract
- 6 cups flour
- 4 teaspoons baking powder
- 2 eggs
- 1 teaspoon salt

Cream Cheese Frosting
- 1/2 cup (400 g) cream cheese
- 1/2 cup butter or margarine
- 1 lb or (500 g) sifted icing or confectioner's sugar
- 1 teaspoons vanilla extract
- candy in the colors of the rainbow: red, orange, yellow, green and blue

Cookie Dough Recipe Instructions
- Pre-heat your oven to 200 deg Celsius or 400 deg F. In a mixer fitted with paddle attachment, cream butter and sugar together.
- Add eggs and vanilla and mix to combine.
- In a separate bowl, add flour, baking powder and salt. Mix, then slowly add to egg butter mixture with mixer on low.
- Mix until all the flour is combined and dough does not stick to your fingers. You can add a little more flour if needed to achieve this consistency.
- Divide dough in two equal balls. Take one half of the dough and roll to about 1/4 inch (0.5 cm) thick. Place onto a baking tray lined with parchment paper.
- Use your template and an x-acto or very sharp knife to cut out your rainbow cookie template outline.
- Take the other dough half and roll to about 1/4 inch (0.5 cm) thick. Place onto a baking tray lined with parchment paper.
- Use your template to cut another cookie outline.
- Bake both cookies for about 12-15 minutes until lightly golden on the edges. Let cookies cool completely on the tray to avoid crumbling.
- Place cooled cookies on wire rack to cool completely before frosting.
Cream Cheese Frosting Recipe Instructions
- In a mixer fitted with paddle attachment, combine cream cheese and butter.
- Add half the sugar, beating on low until combined.
- Add remaining sugar and vanilla and beat to combine for about 2 minutes.
- The frosting should be quite firm and hold a peek, to avoid any spillages when sandwiching the cookies together. So add more sugar to achieve a firmer consistency.
- Place frosting into a piping bag fitted with a large round tip.
Assembling The Cookie Cake
- Place a rainbow cookie on a serving dish and pipe the frosting on, starting from edges towards the center. Leave a 1/2 inch or 1 cm border all the way around.
- Place the other rainbow cookie on top to sandwich the cookies together.
- Frost the cookie top with remaining frosting.
- Decorate the entire cookie with various candy in the color of the rainbow, starting with red and finishing with the blue candy.
- Leave the sides without any candy to make them look like "clouds".

ReplyDeleteThese are beautiful! I know these fit with St. Patrick's Day right around the corner, but have a birthday on the 18th, so we really never celebrate that. What a fun activity they would be with a lesson on colors or on Noah's Ark though. I pinned it to my cookie board so I won't forget! :) Thank you for sharing!
