Have you seen these amazing, trendy cream tarts in shapes of numbers and letters, taking over Instagram and Pinterest? Well, I personally like to call them "cookie cakes" instead because, well, they look like layered cake to me!
They're basically two giant sugar cookies sandwiched together with some sort of frosting in the middle, and decorated on top with tons (and I mean tons) of candy, fruit, macarons, chocolate, edible flowers...you're only limited to your imagination when it comes to the decor of these cookie cakes!
So a couple of weeks ago, I embarked on making my very first cookie cake / cream tart. But in the shape of a pineapple! I haven't seen one of those around yet, so maybe we're starting a trend within the trend?! 😋
Either way, I must say, I'm hooked. Not only these cookie cakes are SO much easier to bake and decorate than a regular cake, but you can easily personalize the shape to suit ANY event - you can make the usual letters or numbers for a birthday party, but also heart shapes for Valentine's Day or weddings, flowers for Mother's Day or a bridal shower, unicorns, flamingos, cacti, footballs...you name it!
I think it's such a fun and special way to personalize a cake. Or cookie. Or cookie cake! 😉 They make great desserts too, and I'm already planning which cookie cake I'll be making next!
When I made my pineapple cookie cake, I placed it in the fridge until ready to serve for a few hours. The whole cookie cake got even better, because the shortbread cookie layers kinda melded with the frosting and was so easy to cut, like a regular cake!
The buttery shortbread cookies recipe is one that always use, it's so crumbly and totally melts in your mouth. The frosting is also my regular go-to cream cheese frosting, flavored and colored for the occasion.
In this recipe, I kept the cookies and frosting all lemon flavor (couldn't find pineapple flavoring where I live), but you could totally make any flavor you wish to suit your party or taste. And I really suggest you go to town on the candy front. I did! 😁

Pineapple Cookie Cake Recipe
This trendy cream tart/cookie cake shaped like a pineapple is so easy to bake and decorate, perfect for any summer party or birthday!
ingredients
Cookie Dough Recipe
- 2 cups room temperature butter
- 3 cups icing or confectioner's sugar
- 3 teaspoons lemon extract
- 6 cups flour
- 4 teaspoons baking powder
- 2 eggs
- 2 teaspoons salt
Cream Cheese Frosting Recipe
- 1 1/2 cups (400 g) cream cheese
- 1 1/2 cups (400 g) soft butter
- 15 sifted cups icing or confectioner's sugar
- gel food coloring in yellow
- gel food coloring in green
- 2 teaspoons of lemon extract
- Green and yellow candy and fruits of choice for decor

Cookie Dough Recipe Instrcutions
- Pre-heat your oven to 200 deg Celsius or 400 deg Fahrenheit. In a mixer fitted with paddle attachment, mix butter and sugar until creamy.
- Add eggs and lemon extract, and mix until combined.
- In a separate bowl add flour, salt and baking powder. Mix, then add slowly to the butter and sugar with mixer on low. Mix until combined and dough does not stick to your fingers.
- Divide the dough in equal halves. Take one of the halves, place onto a baking sheet lined with parchment paper, and roll to fit your cookie template or giant cutter (this is so you don't struggle to lift a giant cookie after rolling). Roll to a thickness of about 1/4 inch (0.5 centimeters).
- Take off excess dough from around the cookie cutter or template, and remove the cookie cutter or template.
- Repeat the above two steps for the other dough half.
- Bake both cookie halves in a pre-heated oven for about 10-12 minutes. Let cookies cool down in the tray before handling, otherwise they'll crumble.
- Place cooled cookie onto a wire rack to cool completely until ready to frost.
Cream Cheese Frosting Instructions
- In a mixer fitted with paddle attachment, cream butter and cream cheese together.
- Add the sugar with the mixer on low, one cup at a time, until smooth and creamy.
- Add lemon extract and mix to combine.
- Place half of the frosting into a piping bag fitted with a large round piping tip. I used tip no. 10
- Place 2/3 of the remaining mixture into a bowl and add a few drops of yellow gel coloring. Mix to combine, then place into a piping bag fitted with a large round tip. I used tip no. 10
- Color remaining 1/3 of the frosting green, and place into a piping bag fitted with a large round tip. I used tip no. 10
Assembling The Cookie Cake
- Pipe dollops of the white frosting all around the edge one of the cookies, leaving a 1/4 inch (1 cm) from the edge to avoid overfilling. This is your cookie base.
- Fill the center with more white frosting.
- Carefully add another cookie layer on top.
- Frost the pineapple crown with green frosting as you did for the white cookie base ( Outline, then fill)..
- Frost the pineapple body with yellow frosting as before.
- Decorate the green part with green fruits and candy. Decorate the yellow part with yellow fruits and candy.
