If you follow me on Instagram, you'd have probably seen this vegan chocolate mousse made on countless occasions in my stories. It's become my go-to recipe for chocolate mousse!

Not only is this chocolate mousse SO quick and easy to make, but it's also vegan, tastes delicious and only requires TWO ingredients!

One of the the ingredients is called Aquafaba, which is basically the liquid from a can of chickpeas. But before you turn you nose up at it, wait!

Using the water from a can of chickpeas sounds totally weird, I know. But the chickpea water or Aquafaba, works as if by magic to replace the egg whites in the traditional chocolate mousse recipe (hence the vegan title) and does NOT taste of chickpea. Pinky promise! 😉

I first came across this vegan chocolate mousse recipe on a French TV program that was reviewing a vegan café in Paris.

I couldn't believe it when they shared their chocolate mousse recipe and said that it was only made with two ingredients. No sugar, cream, eggs or fat added?! 🤔

Naturally, I was quite intrigued and decided to try it for myself.

I must say that the results exceeded my expectations! I was hoping at best, for a "healthier" version of a classic chocolate mousse, a little stiffer and with bland taste. 

But what I got was an airy, creamy, decadent chocolate mousse that was beyond delicious! In fact, it's the BEST chocolate mousse I've ever tasted. EVER.

Whoever first thought of using this "waste" by-product from a chickpea can, has literally reinvented some of the best classic recipes, and made them vegan but above all, DELICIOUS!

The chickpea water or Aquafaba really is an excellent replacement for the egg whites, which are featured in a classic chocolate mousse. But Aquafaba is vegan (of course), less expensive (after all, you'd chuck the chickpea water away...) and much easier to work with than egg whites, in my view.

Whenever I've made a classic chocolate mousse in the past, they didn't always turn out airy and light. But with this Aquafaba recipe, it does!

So without further ado, here's my recipe, and tried and tested tips to making this delicious Aquafaba vegan chocolate mousse.

Vegan Chocolate Mousse Made From Aquafaba

Vegan Chocolate Mousse Made From Aquafaba - made with just two ingredients, one of them being the water from a can of chickpeas!

Ingredients:

  • 800 g can of chickpeas - place your cans in the fridge for a few hours before using
  • 200 g dark chocolate (50% cocoa) cut into chunks
  • Optional: chocolate shavings

Instructions:

  1. Drain the water from a can of cold chickpeas, then whip it on high in a mixer fitted with the whisk attachment for minimum 5 minutes until the mixture has increased in volume and there is no more liquid in the mixer.
  2. Meanwhile, melt the chocolate in the microwave at 30 second intervals until fully melted. Let it cool a little.
  3. Turn the mixer off and incorporate the melted chocolate into the white foamy mixture with a large metal spoon, in a folding motion as not to reduce the air too much. 
  4. Once the chocolate is fully incorporated, spoon the mixture into serving glasses and refrigerate for at least 4 hours.
  5. Optional: Just before serving, add chocolate shaving on top as garnish.

Notes:

The best results for an airy mousse are achieved with cold chickpea water, by mixing it thoroughly for at least 5 minutes and by using 50% chocolate. A higher percentage chocolate has less fat in it and can produce a mousse that is less aerated and light.
