Now that school has started, I find myself making this gluten-free banana bread in batches on the weekend, and serving it up for breakfast, snack and dessert throughout the week!
This is such a quick and easy recipe to make, not to mention that it's also gluten free (my husband is gluten intolerant) and is super nutritious too!
I like to serve it with fresh fruit, yogurt or cream cheese, and a drizzle of honey for a wholesome start to our day. But in all honesty, this banana bread is pretty tasty on its own, and needs nothing else. Apart from maybe a cup of coffee on the side? 😉
Gluten Free Banana Bread Recipe
To turn this banana bread into a suitable desert, just top it with ice cream and you're done!
I make this banana bread with chocolate chips because my kids are HUGE fans of chocolate. But you could totally leave out the chocolate, or substitute it for chopped nuts or even dried fruits like raisins or dried apricots.
I have also made this banana bread without peanut butter (whenever I ran out of peanut butter at home..) and it tastes just as good!
Another ingredient I like to add is chia seeds instead of the chocolate chips, or even mixed seeds like sunflower seeds, pumpkin seeds...but that's not everyone's cup of tea. My kids for instance, prefer the chocolate by far. Who can blame them? 😁
But I just wanted to let you know that this recipe is pretty flexible in terms of the ingredients. In fact, I'm already planning my next batch using pumpkin puree instead of bananas for fall. I'll have to experiment a bit and let you guys know how it goes!
For the meantime, I urge you to try this recipe! It makes for a great on-the go snack or after school treat too!
