Christmas is when I bake the most. Every weekend, it's a new cookie recipe I like to try. And these days, I find myself reaching for my gluten free brownie cookies over and over again!
These brownie cookies are fudgy in the center and slightly crisp on the edges. They pack a huge chocolate flavor and have that umami note that make it my (and my family's) favorite cookies EVER!
I love brownies. And cookies. So the idea of combining both brownies AND cookies into an easy-to-make recipe, is for me, the embodiment of Holiday baking 😉
Gluten Free Brownie Cookies
I found the basic recipe for brownie cookies online (link below), and modified it slightly to suit my husband's gluten-free dietary needs (he's gluten intolerant).
Most of the gluten-free baked goods recipes I find online have gluten-free flour, which I'm not really keen on, because gluten-free flour is SO expensive and I don't always have it on hand.
So I tried the recipe with almond flour or ground almonds, and it works SO much better than with regular flour!
You get a super moist cookie dough, and a hint of almond, which complements the chocolate flavor so perfectly!
I also tend to bake these cookies on the larger side. What mean is, I use an ice-cream scoop to scoop out large cookie dough balls onto a baking tray.
This technique not only makes for easy handling of the cookie dough, but it also gives you giant cookies with a super pretty brownie crinkle on top and perfectly fudgy centers.
By using an ice-cream scoop I get about 12 giant cookies, but you can also roll out 24 smaller cookie dough balls by hand, which is ideal for a cookie exchange party or to hand out at a family gathering.
TIP: Make sure you have wet hands when you roll out the smaller cookie dough balls so the dough won't be so sticky.
These gluten free brownie cookies also make great Christmas or Holiday edible gifts!
You could also create inexpensive cookie jars to gift by decanting all the dry ingredients to a Mason jar and attaching a chocolate bar and a recipe card to the side of the jar. All the recipient has to do is to add the wet ingredients (eggs and butter) to create their own cookies at home!
Gluten Free Chocolate Brownie Cookies

Gluten Free Chocolate Brownie Cookies - these delicious cookies are so easy to make, and perfect for the Christmas Holidays or to give as edible gifts!
Ingredients
- 250g dark chocolate cut into chunks (minimum 50% cocoa)
- 50 chocolate chips (optional)
- 1/4 cup butter
- 2 eggs
- 3/4 cup soft brown sugar
- 1 teaspoon vanilla extract
- 2/3 cup almond powder (ground almonds)
- pinch of salt
- 1/2 teaspoon baking powder
Instructions
- Place the chocolate chunks and butter into a heat-proof bowl.
- Melt in the microwave at 30 second intervals, stirring in between.
- In a separate bowl, add eggs, sugar and vanilla and whisk until combined.
- Add the melted chocolate to the egg mixture and whisk until fully combined.
- Fold in the almond flour, salt and baking powder to the chocolate mixture until combined.
- If using, stir in the chocolate chips into the mixture, then refrigerate for about 1 hour or until set.
- When read to bake, scoop out the cookie dough using an ice-cream scoop or make small dough balls with wet hands.
- Place the cookie dough balls onto a baking tray lined with grease-proof or parchment paper.
- Bake at 200 degrees Celsius for about 12 minutes for small cookies, and 14 for larger cookies, until edges are set. The center of the cookies should remain fudgy.
- Let cookies cool down on the tray, then carefully transfer cookies to a cooling rack.
Notes:
Cookies keep well for about 1 week in an airtight container.
