My Favorite Fiesta Tablescape & Recipes
I could eat Mexican food every day, and with Cinco de Mayo approaching gives me the perfect excuse to gorge myself on my fave fiesta recipes ;)
You may remember the kiddies Pinata Party we styled a few years back? Well, this year I really wanted a more grown up vibe for our fiesta, complete with a Mojito Bar, which I'll share later in the week!
My Mexican Fiesta Tablescape
The ceramic pots and dishes we used are perfect to set the tone for this relaxed tablescape. I got these dishes at a flea market in France, but I'm sure you can find suitable substitutes for your party closer by. Just be sure they're not too matchy matchy, as it adds character and a more convivial look to the table.
The tablecloth I used was a hammock-style cloth I had in the studio. I like that's it's a pale green, rather than the usual bright colors of Mexican parties. I feel it lets the colorful food stand out more!
But, because it is supposed to be a Mexican party, I also laid a colorful lace runner (from Brazil) on top for interest and texture.
To complete the fiesta tablescape, we added potted cacti and succulents, and a bowl of bright red peppers and chilies. I love when table decor doubles as something function or edible! Plus, it's SO much easier than faffing about with floral arrangement, right?! ;)

My Favorite Fiesta Recipes
My go-to Mexican inspired recipes are super easy to make (you can even make them a day ahead!) and a hit with everyone. And having a table full of amazing little dishes makes for super easy entertaining, which is my favorite kind ;)
You can certainly make/prep all these dishes a day ahead, and just re-heat before your party. How easy is that?!
They're so easy I decided to give 'em to you in one post. You're welcome! :)
Chipotle & Cilantro Chicken Recipe
Ingredients:
* 5 Chicken breasts cut into strips
* 1 tablespoon of crushed garlic paste
* 1 tablespoon of chipotle powder
* 2 tablespoons of ketchup
* 2 tablespoon of cooking oil
* 1 cup of chopped cilantro
* salt to taste
Directions:
Marinate the chicken in the garlic paste and chipotle powder for 30 minutes. Then heat a skillet with the oil and sauté the chicken until cooked and brown. Add the ketchup, the chopped cilantro and a half cup of water. Stir and simmer for 5 minutes. Serve at once.
Ingredients:
* 2 ripe avocados
* juice of 1 lime
* 2 garlic cloves crushed
* 1 teaspoon of smoked paprika
* 3 tablespoons of crème fraîche
* salt to taste
Directions:
In a pestle and mortar (or food processor if you prefer a smoother texture), place the avocado, garlic, lime juice and salt. Blitz or crush until you have a paste. Stir in the crème fraîche and smoked paprika. Adjust salt if needed. Refrigerate covered with plastic wrap until ready to serve.
Easy Pico de Gallo Recipe
Ingredients:
* 2 ripe tomatoes cut into small cubes
* 1 medium onion cut into small cubes
* 1 tb spoon of jalapeno without seeds cut into small chunks (if you like it extra hot, leave seeds in!)
* 1 cup of finely chopped cilantro
* juice of 1 lime
* 3 tablespoons of extra virgin olive oil
* salt to taste
Directions:
In bowl mix all the ingredients. Test seasoning and adjust if necessary. Refrigerate until ready to serve.
Sweet Caramelized Fajita Peppers Recipe
This is a great side but also perfect for vegetarian fajitas!
Ingredients:

* 1 red bell pepper cut into strips
* 1 yellow bell pepper cut into strips
* 1 green bell pepper cut into strips
* 3 onions cut into strips
* 2 tablespoons of cooking oil
* salt to taste
Directions:
In a large wok add all the ingredients and bring to a medium heat with a lid on. Lift the lid from time to time to stir fry over a medium heat. When the vegetables are soft and onions are no longer translucent, then take the lid off and continue to stir fry until they turn brow and start to caramelize. Adjust seasoning and serve at once.
To accompany all the fiesta dishes we had sweet corn relish, red kidney bean salad, corn tortillas wraps and chips, lots of limes, hot sauce and fraîche on the side. YUM! :)
