No-Bake Coconut Pudding Recipe
Did you know that September is National Hispanic Heritage Month?
For those of you who don't know, “National Hispanic Heritage Month is the period from September 15 to October 15 in the United States, when people recognize the contributions of Hispanic and Latino Americans to the group's heritage and culture” (source Wikipedia).
Embracing every little bit of our culture, especially when living in another country, is a real must to help keep us rooted, and to get our kids and future generations more immersed in our ancestors' traditions and heritage.
I find that one really authentic and easy way to do that is through cooking together as a family and passing down to my kids some of those staple recipes that have been in the family for years.
The beauty of this pudding is that it's super quick and easy to make too, and there's NO-BAKING involved! So, you can most certainly get the kids involved and create those beautiful family memories I was talking about earlier!
This delicious recipe is best made the day before your party, so it has enough time to set and properly chill in the fridge, which will make it easier to cut and serve on the day.

No-Bake Coconut Pudding Recipe or Pudin de Coco

No-Bake Coconut Pudding Recipe - a quick, easy and delicious dessert recipe for any occasion or dinner party your may be hosting this season!
ingredients:
- 1x 14oz. can of La Lechera® Sweetened Condensed Milk
- 3 cans of milk (use the empty condensed milk can as a measure)
- 4 tablespoons cornstarch
- 1 cup shredded coconut or coconut flakes (or a mixture of the two)
- Butter cookies or any mildly-flavored cookie or cracker of choice – the exact quantity will depend on the size of your serving dish and cookies, but I used about 32 butter cookies or 10-12 oz.
- 1 can of cream (use the empty condensed milk can as a measure)
- 1 cup NIDO® Dry Milk

How to cook No-Bake Coconut Pudding Recipe or Pudin de Coco
- Dissolve the cornstarch and dry milk in 2 cans of milk.
- Add this mixture and the condensed milk to a saucepan, then place the saucepan over medium heat, stirring constantly until thickened for about 10 minutes. (The consistency of the cream should be like that of a thick custard).
- Once thickened, turn off the heat and let the mixture cool.
- Once cooled, add the cream, whisk until combined, then set aside.
- Moisten the cookies in the remaining can of milk.
- Line a rectangular glass dish with the cookies, pour half of the cream on top and sprinkle half the coconut over the cream.
- Add another layer of moistened cookies, cover with remaining cream and finish it off with the remaining coconut.
- Refrigerate the dish covered with plastic wrap for at least 4 hours or overnight for best results.

I have never heard of this dessert, but WOW. We are huge coconut fans so I plan to give it a try this weekend!
