Saint Patrick's Day is coming up, so I thought I'd make a delicious and pretty dessert befitting the occasion, hence this chocolate layer cake with a delicious Baileys condensed milk frosting!


But this time around, I wanted to try my hand at Russian buttercream or sweet condensed milk frosting that I recently came across on YouTube!

Chocolate Layer Cake with Baileys Condensed Milk Frosting

This sweetened condensed milk frosting or Russian buttercream, is usually made with just two ingredients - butter and sweet condensed milk. So it's not hugely sweet, and should be really creamy due to the fact that there's no powdered sugar in the recipe.

Obviously, you can flavor this Russian buttercream frosting with anything you like, and for this Saint Patrick's Day cake I decided to use Baileys for the flavor. But you could use vanilla, melted chocolate, strawberry jam, cream cheese, etc to create any flavored buttercream frosting of your choice.

This Russian frosting is also super easy and much quicker to make, compared to my go-to Swiss meringue buttercream (SMBC) frosting. Another bonus point that made me want to try it even more!

I thought the flavors of the condensed milk would be perfect in this recipe, since I know for a fact that there's condensed milk in the Baileys recipe (I made my own homemade Baileys here on the blog a few years ago).

The only thing I found using this Russian buttercream, is that the consistency of the frosting was a little denser than the SMBC that I'm used to. And being winter and all, the frosting was stiffer (like cold butter) and I had a hard time getting rid of the air bubbles in it, even after beating it quite a few times with a wooden spoon.

So to get a perfectly smooth cake frosting, I had to run my cake scraper through some hot water a few times. Not big deal really, but worth mentioning.

Overall, it's a really easy frosting to make and work with. And I'm really pleased with how the cake and frosting turned out, both were delicious! You can really taste the Baileys in the frosting and it paired beautifully with my go-to chocolate cake sponge.

Also worth noting, this Russian buttercream frosting is slightly yellow due to the sweetened condensed milk in the recipe. This yellowish color is actually perfect for this cake, as you really want that Baileys color to show through on the frosting. But if you're looking for a bright white frosting, then I'd stick with SMBC.

Chocolate Layer Cake with Baileys Condensed Milk Frosting - a delicious cake with an easy and quick to make Russian buttercream frosting, perfect to serve on Saint Patrick's Day!

ingredients:

Chocolate Sponge Cake - for three 6-inch layers
  • 250 g butter
  • 250 g soft brown or white sugar
  • 1/2 tsp vanilla or coffee extract
  • 4 eggs
  • 160 g flour
  • 90 g cocoa powder (100%)
  • 10 g baking powder
  • a little cream or milk if mixture is too stiff
  • Chocolate chips for filling and decor (approx. 200 g)
  • Four-leaf clover chocolates for decor (optional)
Baileys Condensed Milk Buttercream: 6 cups (enough for frosting a 6-inch layer cake), filling and swirls
  • 750 g butter - cold but soft to the touch
  • 600 g sweetened condensed milk - cold
  • 6 tablespoons Baileys

How to cook Chocolate Layer Cake with Baileys Condensed Milk Frosting

Chocolate Sponge Cake
  1. In a mixer fitted with paddle attachment beat sugar and butter for about 10 minutes until paler and fluffy.
  2. With the mixer on medium speed, add the vanilla, then add one egg at a time until combined.
  3. In a separate bowl mix together the dry ingredients.
  4. Take the mixture off the mixer and fold in the dry ingredients with a large metal spoon until combined.
  5. Divide the batter equally into 3 six inch round cake pan lined with parchment paper and greased (about 300 g in each tin).
  6. Bake at 180 deg. C. for about 25-30 minutes until a skewer come out clean when inserted into the center.
  7. Let cakes cool in pan, then transfer onto wire rack to cool completely.
  8. TIP: After cooling you can freeze the cake layers for about 2-4 weeks. I wrap them in a double layer of plastic wrap and then foil and freeze.
  9. Defrost the cake layers in the fridge overnight before decorating.
Baileys Sweet Condensed Milk Buttercream
  1. In a mixer fitted with the whisk attachment, whip the butter for about 10 minutes on high until pale and fluffy.
  2. Turn mixer on medium and slowly pour in the cold sweetened condensed milk, until combined.
  3. Add the Baileys and mix to combine.
  4. Beat the frosting with a wooden spoon to get rid of any air bubbles.
Frosting and Decorating The Cake
  1. Add a little buttercream to a cake board and place your first layer on top.
  2. Add about 1 cup of frosting and about 2 tablespoons of chocolate chips on top.
  3. Add another cake layer and repeat the frosting and choc chips, finishing with the last cake layer on top, flat side up.
  4. Crumb coat the cake and place it in the freezer for about 10 minutes to firm up.
  5. Add another generous layer of frosting and smooth it out with a cake scraper. TIP: run the cake scraper through hot water to make the smoothing process easier.
  6. Add chocolate chips to the bottom part of the cake while the frosting is still wet.
  7. Decorate the top of the cake with frosting swirls (I used an open star large tip) and add a four-leaf clover chocolate on top of each swirl.
  8. Fill the top of the cake with more chocolate chips.

    1. Nope! that's the whole point of this frosting! The condensed milk is sweet enough, so the recipe does not require any other form of sugar :)
