I love to bake and lately I've been having a lot of fun in the kitchen coming up with easy recipes that involve only a few ingredients, supplies and produce that I already have in my pantry, store-cupboard or fridge. Current times oblige, right? 😉

This is how this classic English trifle with store-cupboard ingredients and frozen raspberries was born!

Initially, I planned to make the trifle with strawberries, but the stores had run out of berries 🤷‍♀️ so my husband suggested I use frozen raspberries instead.

Classic English Trifle With Store Cupboard Ingredients and Frozen Raspberries

My (English) husband LOVES trifle, and we normally only make it at Christmas (it's an English tradition). 

But given the current stay-at-home situation, I thought I'd make an exception this Easter and make his favorite dessert!

A classic English trifle consists of a layer of pound cake soaked in sherry (I skipped the alcohol in my recipe to make it kid-friendly) topped with flavored gelatin, a layer of fruit, a layer of custard and a layer of cream, plus toppings or garnishes (fruit, nuts, chocolate shavings, etc.).

But I had never used frozen berries on a trifle recipe before, so I wan't sure how it would work. Would it go all soggy? Would it be too liquid?

This trifle recipe turned our better than I expected and was DELICIOUS! No sogginess, no extra liquid mess. Just pure, unadulterated, trifle deliciousness! 😍

So don't be afraid to use frozen berries or fruit, or even tinned fruit if you don't have any frozen!

I think the trick in using frozen fruit is NOT to defrost them beforehand.

My custard was also lukewarm when I poured it onto the frozen berries (happy accident), and I think it helped to "defrost" the berries somewhat without completely defrosting them. Does that make sense?

Anyways, all I know is that this NO-BAKE recipe was a huge success in our home, and I'll be making it more often for sure!

Like the title of the post says, I used all store-cupboard ingredients to make this classic English trifle - pound cake, strawberry gelatin, raspberry jam, store-bought custard and frozen berries.

The only "heavy-lifting" I did was to whip some double cream. No biggie!

So I guess this is also the perfect recipe to make with kids (one more idea to keep them occupied and happy at home!) 😋

Classic English Raspberry Trifle

Classic English Trifle With Store Cupboard Ingredients and Frozen Raspberries - easy, quick, no-bake dessert that tastes delicious!

Ingredients:

  • 1 packet strawberry gelatin (85 g or 3 oz)
  • 250 g  (9 oz) pound cake
  • 2-3 tablespoons raspberry jam
  • 250 g (2 cups) frozen raspberries
  • 60 g (1/4 cup) almond slivers, toasted
  • 1 liter (34 fl. oz) thick custard
  • 40 cl (13 fl oz) double cream

Instructions:

How to cook Classic English Raspberry Trifle

  1. Cut your pound cake into 1 cm (1/ inch) slices to fit the bottom of a trifle bowl.
  2. Spread a little jam on top of each slice, and place the cake slices in the bottom of a trifle bowl.
  3. Prepare your gelatin according to packet instructions, then let it cool completely.
  4. Gently pour the gelatin over the cake slices and refrigerate until the gelatin is completely set, then add the frozen raspberries on top, reserving a few for garnish. 
  5. Pour the custard over the the gelatin and fruit layer, then refrigerate it while you whip the cream.
  6. Whip the cream to soft peaks. You can sweeten it to taste or even add a little vanilla extract (I didn't, and it still tasted great!).
  7. Add the cream on top of the custard layer.
  8. Garnish with more frozen raspberries and toasted almond slivers.

Notes:

To toast your almond slivers: Place them in a dry frying pan over a medium heat, tossing the pan continuously, until the almonds are lightly browned.
