Summer is nearly upon us, and this no-bake key lime pie is the answer to all your dessert needs! 

This key lime pie recipe is SO easy and quick to make, requires NO baking and only requires 5 ingredients!

I've made this key lime pie also as parfaits or individual cups, which works just as well and is super practical , not to mention dainty, to serve at any family gathering or any event you may be hosting this season!

No-Bake Key Lime Pie Recipe with a Biscoff Cookie Base

For the base of this key lime pie, I used Biscoff or Speculoos cookies or biscuits (Dutch cinnamon biscuits), which I think lends itself beautifully to the citrus flavors. 

Also, when I can't be bothered to even crush cookies for the base ('cause I can get lazy like that...), I skip it altogether and just serve the "pudding" part on its own inside little cups, and then add a biscuit on top as garnish 😉

But of course, you could totally use a store-bought biscuit base too!

This key lime pie also sets pretty quickly, so its the perfect treat to whip up at a moment's notice!

The quantities I made here are for a large round pie that can serve 8-10 easily.

But like I said, you can also serve them in little cups. If you serve them inside individual cups at your next party, then you can easily make 15 servings out of this recipe.

The pudding or filling of this key lime pie has only 3 ingredients: limes (of course..), sweet condensed milk and cream.

The acid in the lime juice is what sets the cream and condensed milk together. It's really cool to see how quickly this chemical reaction happens before your eyes!

You just have to whisk the pie filling ingredients together and boom! Instant pudding (or pie) consistency without gelatin, eggs or an oven!

This key lime recipe was also the inspiration for my Brazilian passion fruit mousse that you can see here. I simply swapped the lime juice for the passion fruit juice. So you could also turn it into a pie like this!

You also don't need to garnish this pie, as it looks and tastes pretty yummy au naturel.

But for the wow factor, you can add a little (or a lot 😁) whipped cream on top, a little lime zest and a few lime slices to make it totally Pin-worthy, just before serving.

For the cream on top, I used double cream, and whipped it without any sugar because there's already enough sugar in the pie filling and base.

I decided to decorate just one half of the pie, so you could see the pretty, creamy condensed milk pie filling peaking out, but you could also pipe some cream rosettes on top or some other fancy swirl if you like! 😉

Delicious, quick and easy to make, 5-ingredient, NO-BAKE key lime pie - the perfect dessert for hot summer days!

Ingredients

  • 500g Biscoff (Speculoos) or other crumbly cookies
  • 3/4 cup melted butter
  • 2x 397g cans sweet condensed milk
  • juice of 2-3 limes (depending how big they are)
  • 200 ml double cream
  • Optional: Extra whipped cream, lime zest and slices for décor

Instructions

  1. Use a food processor to crumb the cookies into a fine powder.
  2. Add the cookie crumbs and melted butter to a bowl and mix until combined and the crumbs resemble wet sand.
  3. Line a 30 cm round pie dish with the cookies crumbs, pressing with the back of a spoon. Level the base as much as possible. refrigerate while you make the filling.
  4. Add condensed milk, cream and lime juice to a bowl and mix until combined.
  5. Pour the filling onto the cookie crumb base and spread it out using the back of a spoon. Leave about 1 cm border of cookie peeking on the edges.
  6. Refrigerate the pie for about 2 hours before serving, or ideally overnight.
  7. Optional: Garnish with whipped cream, lime zest and slices just before serving.
