Farfalle Pasta in a Spicy Tomato and Salmon Sauce
This is a sponsored conversation written by me on behalf of Garofalo®. The opinions and text are all mine.
Today's post is inspired by great food and Italian heritage! What's not to love?!
Being from Italian descent, I take my pasta very seriously, as you can imagine. That's why I'm super excited to be teaming up with Garofalo® Pasta to share my quick, easy-to-make, but super delicious Farfalle All’Arrabbiata Con Salmone (Farfalle Pasta in a Spicy Tomato and Salmon Sauce).
Farfalle All’Arrabbiata Con Salmone
(Farfalle Pasta in a Spicy Tomato and Salmon Sauce)
Here's a little pasta history for you: Garofalo is the oldest pastificio (a pasta factory) in Gragnano, Italy and has been operating since 1789. How cool is that?!
And since Gragnano is known as the birthplace of pasta (it carries the word “grano” in its name, which means “wheat” in Italian), I'm more than happy to use Garofalo in ALL my recipes!
Garofalo Pasta is also IGP (Identificazione Geografica Proetta) certified. This Italian certification is only awarded to pastificio in Gragnano, Italy who meet strict production requirements that ensure the identity of the region’s pasta is preserved throughout the pasta production process. That's why Garofalo Pasta is the real Italian deal when it comes to pasta!
Plus, I'm happy to let you know that Garofalo is also one of the few Italian imported pastas which is certified Non-GMO; which is not a claim many Italian pastas can make! I picked up my Garofalo Pasta at the Fresh Market!
This pasta dish uses one of my family's favorite short pasta shapes, the Farfalle, which lends itself beautifully to the thick, spicy arrabbiata tomato sauce.
I also love things a little spicy, so my arrabbiata sauce has fresh chilies in it, which add a delicious little kick and contrast to the tangy tomatoes.
To elevate my pasta dish and get a little creative in the kitchen, I took the traditional Italian arrabbiata sauce and added fresh salmon and olives to complete my tasty recipe.
This is a super easy and quick recipe to make and makes for the ideal dinner party dish. It's delicious served all year round but is particularly comforting for those autumnal days ahead of us!
Farfalle All’Arrabbiata Con Salmone (Farfalle Pasta in a Spicy Tomato and Salmon Sauce)
Yield: 4
Farfalle Pasta in a Spicy Tomato and Salmon Sauce - a delicious, quick and easy dish that is perfect for a dinner party or special celebration!
ingredients:
- 2 cups Garofalo Farfalle Pasta
- 1 ½ cups salmon fillet cut into small cubes
- 3 cups chopped tomatoes
- 1 cup of cherry tomatoes cut in half
- 1 cup green or black olives
- 3 tablespoons olive oil
- 2 crushed garlic cloves
- 1 red Scotch Bonnet chili without seeds and finely chopped
- 4 tablespoons fresh chopped parsley
- Salt and black pepper to taste
instructions:
How to cook Farfalle All’Arrabbiata Con Salmone (Farfalle Pasta in a Spicy Tomato and Salmon Sauce)
- Add water and salt to a large saucepan and bring to a boil. Once water is boiled, add the Farfalle pasta and cook it (uncovered) for about 14 minutes on high heat until the pasta is al dente - cooked through but still retains a little bite. While the pasta cooks, make the sauce.
- Heat the olive oil in a large shallow pan and saute the garlic and chili over a medium heat for about 1 minute.
- Add the chopped tomatoes and cherry tomatoes, stir and then simmer gently (uncovered) for about 10-15 minutes until the sauce is a little thicker.
- Gently stir in the salmon, olives, cherry tomatoes and parsley, then season to taste. Remove the sauce from the heat, cover with a lid and set aside while you drain the Garofalo Farfalle Pasta.
- Drain the pasta well, then place it back into the same saucepan.
- Add the arrabbiata salmon sauce on top of the pasta, stir gently and serve straight away. Garnish with a little more freshly chopped parsley just before serving. Yum!
