With Cinco de Mayo 'round the corner we're all into Mexican inspired party ideas this week (as if you haven't noticed..)

And since Mojitos are my fav drinks of all time, I decided to impart its much loved flavors into a cake form for our fiesta celebrations!

I can't tell you how GOOD this crazy idea tasted! Even my husband who is not really partial to cakes or Mojitos, couldn't get enough of it! 😀

So to break it down, I used plenty of mint and lime, both in the cake batter and the frosting itself, which not only tasted superb, but also added a little speck of green to the cake, which I loved!

I first debated whether to make it a "naked" cake or not, but decided to cover the entire thing with creamy frosting three times for the win! Yes, I'm a "more is more" kind of gal when it comes to cakes 😋

But I guess you could totally go the naked cake route too, and maybe decorate the cake with some succulent frosted flowers? It would be perfect for a Mexican wedding, don't you think? Fab!

Anyhow, here's how I made this delicious Mojito cake! If you make nothing else for your Mexican party, then make this cake. Honestly, you'll thank me later! 😉

Mojito Cake Recipe

Lime sponge cake ingredients:

* 1 lemon or lime cake box mix
* zest of 2 limes
* 3 eggs
* 200 ml or 7 fl oz cream

Mojito frosting ingredients:

* 550 g or 18 oz cream cheese
* zest + juice of 1 lime
* 2 tablespoons of finely chopped, fresh mint leaves
* 2 tb spoon white rhum
* 2 1/2 cups of sifted icing sugar

Mojito sugar syrup ingredients:

* 150 g or 5 oz white sugar
* 2 tablespoons water 
* zest + juice of 2 limes 
* 80 ml or 3 fl oz white rum 
* 1/4 cup fresh mint leaves

Directions:

1) Make the sponge cake: In a bowl add cake box mix, cream, eggs, and lime zest. Whisk until smooth. Place in a greased cake pan (about 18 cm or 7 inch round) and bake at 200 deg C or 392 F for about 30-40 minutes, until a skewer comes out clean when inserted into the center of the cake.


2) Meanwhile, make the Mojito sugar syrup: In a pan add sugar, water, lime juice, zest and rum and bring to a medium heat to dissolve the sugar. When the sugar is fully dissolved, bring to a boil until the mixture reduces to about half and thickens slightly (about 2-3 minutes). Add the mint leaves and set aside to cool.

3) For the Mojito frosting: Whisk all the frosting ingredients together in a bowl. Place in the fridge until ready to frost your cake.

4) When cake is baked, let is cool in the pan, then remove and place in the freezer for about 5-10 minutes to firm up, so it's easier to cut. Cut cake in half and brush the centers with the cooled mojito syrup, making sure it soaks well on both halves.

5) Frost the center of the cake with your Mojito frosting, and sandwich the cake halves together. Frost the outside of the cake and place in the fridge to firm up, until you're ready to serve. Decorate with lime slices, zest and mint leaves just before serving.

PS - If you want an alcohol-free version, substitute the rum with lime juice in the frosting and the syrup.
