Despite the cold and rain some of us are having, spring is actually here. And I thought I'd share some easy-to-make flower sugar cookies for all those seasonal spring parties you may be currently planning.

'Cause let's face it, no party is complete without cookies. And no spring party is complete without flower sugar cookies!

Confession time: I used to be reeeeeally scared of decorated cookies. I mean, you see all these amazing cookie designers on Pinterest or Instagram... it may seem like you need years of training to make beautifully decorated sugar cookies #amiright?! 😕

But over my years of blogging and party planning, I've forced myself to "feel the fear and do it anyway". Which kinda paid off, 'cause I'm no longer totally petrified at the thought of decorating some cookies. And I've even got my daughter hooked on cookie-making too (did you see her helping me bake these on my Instagram stories?) 😊

These pretty flower cookies are vanilla flavored and colored in pink, teal and yellow but you can use any flavoring or colors to suit your event colors!

The basic sugar cookie recipe I use comes from Sugarbelle's. It's my go-to recipe for decorated sugar cookies because it works every time.

The royal icing (icing used to decorate sugar cookies) is a new recipe I'm trying from The Pioneer Woman's site by Bridget of the blog Bake at 350. I was looking for a recipe that didn't require meringue powder as it's virtually impossible to find where I live.

This royal icing recipe uses lemon juice and pasteurized egg whites. But please feel free to use the meringue powder royal icing recipe if you're at all worried about using egg whites in your recipe.

Easy Flower Sugar Cookies Recipe

ingredients

Basic Sugar Cookies Recipe Ingredients
  • 1 cup of room temperature butter (not margarine)
  • 1 ½ cups icing sugar (confectioner's/powdered sugar)
  • 1 egg
  • 3 teaspoons vanilla extract
  • 2 3/4 cups of flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
Royal Icing Recipe Ingredients
  • 1 pound of confectioner sugar sifted (icing sugar)
  • 3 pasteurized egg whites
  • 1 teaspoon of fresh lemon juice
  • gel food coloring in your choice of colors - I used pink, teal and yellow

Basic Sugar Cookies Recipe Instructions
  1. In a mixer fitted with paddle attachment, mix the butter and sugar until creamy.
  2. Add egg and vanilla and mix until combined.
  3. In a separate bowl add flour, baking powder and salt. Mix, then add slowly to the butter bowl with mixer on low. Mix until all the flour is well combined. The original recipe says "the dough is ready when most of it sticks to the paddle...but when touched it does not stick to my fingers". So add a little more flour if needed to achieve this consistency.
  4. Roll out the down onto parchment paper to about 1/4 inch thick. Add flour to your rolling pin to stop it sticking.
  5. Cut out the flower cookies with a 2 inch (5 cm) cookie cutter and place on baking sheet lined with parchment paper.
  6. Bake in a preheated oven at 400 deg F (200 deg C) for 7-8 minutes.
  7. Let cookies cool down on the tray before handling, otherwise they'll be soft and will crumble. Once completely cool, decorate with royal icing as per recipe below.
Royal Icing Recipe Instructions
  1. In a mixer fitted with the paddle attachment, add sifted sugar, egg white and lemon juice and mix on low until sugar fully combined.
  2. Continue to mix on medium-high speed until stiff peaks are formed.
  3. Once you have stiff peaks, transfer the icing to three separate bowls to be colored. Add a little gel food coloring and mix to reach your desired colors.
  4. Immediately transfer the icing to three separate piping bags fitted with a #2 piping tip. PS -  I use the same icing consistency to outline and fill my cookies, so no need to change piping tips or to alter the consistency of the icing. 
  5. Start by outlining the cookie flower petals with the pink, yellow or teal icing, then fill in the cookie center with the same color in a zigzag motion. TIP: Get rid of any "peaks" in the icing by wetting your finger a little and pressing the peaks down gently.
  6. Decorate the flowers with dots in a contrasting color. You may want to swap the piping tip to #1 for really small dots.

If you're packaging the cookies, let them dry overnight or at least 24 hours. The cookies don't get stale as the icing acts a sealant to keep them fresh.
