Rainbow Grazing Board for Saint Patrick's Day
Have you ever made a grazing board? It's one of my favorite ways to serve a NO-cook, fun and interactive meal to my family, whatever the occasion or celebration!
You have probably seen the cheese and charcuterie board I did last month for Valentine's Day, so this month I thought I'd create a fun rainbow colored grazing board, which would be perfect for celebrating St. Patrick's Day at home!
This grazing board looks SO pretty and is packed with all sorts of yummy fruits and vegetables, making it super healthy too! 😉
Rainbow Grazing Board for Saint Patrick's Day
In our house we're not really candy fans, so we tend to go for savory grazing boards like cheese and charcuterie.
But for St Patrick's day, I thought it would be even more fun to create a healthier version of my go-to cheese and charcuterie board, and include as many vibrant and fresh veggies and fruits as possible!
To my surprise, we did not miss the cheese at all and the different dips we had instead, were a perfect match to all the fresh produce on our board!
You could also make a completely green board, or even add some orange and white touches on your grazing board to emulate the Irish flag!
But the rainbow color theme was much easier to pull off, I think! 😉
Here's what I added to my grazing board:
RED: Roast red pepper & garlic sauce, chorizo slices, red peppers, cherry tomatoes
ORANGE: Carrot sticks, mandarin segments, dried apricots
YELLOW: Piccalilli dip, lemon slices (mainly for color), yellow peppers
GREEN: Homemade guacamole, cucumber slices, green pepper, green olives, sliced green apples
PURPLE/BLUE: Blueberries, dried cranberries, served in radicchio leaves
I also added bread sticks, red onions and some crackers on the side.

For the Piccalilli dip, all I did was add a store-bought Piccalilli to some crème fraiche.
For the red pepper sauce, I added roasted red pepper and garlic paste to yogurt, and topped with a dash of olive oil and a sprinkling of smoked paprika.
