Strawberries have been on my mind and plate lately, and I'm not complaining! They're one of my favorite fruits and so versatile in jams, desserts, drinks and appetizers alike! Of course, one of the classic ways to serve strawberries is with a big bowl of cream! So to crown our strawberry season in style, I decided to bake up a storm with this easy but oh-so pretty strawberry and cream layer cake !
Strawberries and Cream Popsicles Recipe

Popsicles are one of those recipes that is super easy to make, but feels like a real treat every time. My kids love to eat fruit, but turning their favorite fruits or fruit juices into popsicles instantly turns me into super-mom in their eyes! Cherries are in season and I couldn't pass up the chance of making a delicious dessert with them, hence this NO-Bake cherry cheesecake that comes together in a flash and tastes SO delicious! We're so lucky to live in cherry country and have some wild cherries growing on our land, so my kids and I always love to go cherry picking this time of year (before the birds eat them all), and making dessert using cherries at the end of the day, is just the cherry on the "cake" so to speak! 😄
No Bake White Chocolate Strawberry Tart
Mother's day is coming up, and if you need a simple and delicious dessert to impress and celebrate mom, then this white chocolate and strawberry tart recipe is it! With a few handy pantry staples and a punnet of fresh strawberries you can whip up this tart in no time at all, without the need to turn on your oven, which is always a bonus in my book! 👍 I also made a delicious fresh strawberry sauce to serve with this tart for extra indulgence, but if you don't like things too sweet, then simply serve with extra fresh sliced strawberries for a tangy contrast!
This recipe came about by accident, sort of. I was looking for a recipe online that I could make to use up all the blackberries I have growing in my garden. Eventually I found a simple enough cheesecake recipe and bought all the ingredients to make it, but on the day I decided to make it, the blackberries were not ripe yet! So, I swapped the blackberries for frozen summer berries (which I always have in the freezer), and it was a hit!

Ever since making my Hibiscus Margarita , I've been obsessing over new ways to include Hibiscus in other recipes. I know that iced tea is not necessarily a groundbreaking recipe to use hibiscus in, but since summer's here, I'm sharing another tasty beverage that you can whip up in no time to refresh your taste buds! Red, White and Blue 4th of July Layer Cake
I'm so excited to share my latest layer cake creation with you guys, in time for the 4th of July! This red white and blue patriotic 4th of July cake was inspired by fireworks, and so I think it's safe to say more is more in this case? 😁 It's a vanilla sponge layer cake in red, white and blue on the inside and out, and covered in a vanilla American buttercream, drenched in patriotic sprinkles and fun swirls on the top! What's not to love?!
Watermelon rhyme with summer, right?! But so does a chilled Rosé wine. So I thought, why not combine the two for a tasty and easy to make semi-frozen granita (or slushie) cocktail?! So that's what I did! And now do, most times when I'm hosting a get-together or summer party.
