Raspberry Mojito Cocktail Recipe
As you probably saw in my last post , that the Mojito is my favorite cocktail of all time! I especially love concocting fruity versions of this much-loved beverage for all my summer parties, like Cinco de Mayo, which is just 'round the corner. One fruit version that is a a real hit with everyone, and that looks SO SO pretty, is the raspberry Mojito. Which I'm very happy to be sharing with you today. Least of all, because I get to make Mojitos on a weekday, and get to taste-test it for you! 😋
With Cinco de Mayo 'round the corner we're all into Mexican inspired party ideas this week (as if you haven't noticed..) And since Mojitos are my fav drinks of all time, I decided to impart its much loved flavors into a cake form for our fiesta celebrations ! I can't tell you how GOOD this crazy idea tasted! Even my husband who is not really partial to cakes or Mojitos, couldn't get enough of it! 😀
A Colorful Cinco de Mayo Mexican Fiesta
I have Latin blood in my veins, so Cinco de Mayo is one celebration I'm particularly drawn to. Mainly because of the lashings of Mojito, churros and tacos involved, let's be honest 😋 Last year we held an outdoors fiesta ( see all the photos, video and recipes here ), so this year I decided to bring the party indoors, but still keeping the colorful and fun vibe that's associated with all Mexican fiestas!

DIY Quick & Easy Citrus Candles
Come Spring we find ourselves eating more and more outside, like for the fiesta party we shared last week. And there's nothing I like best than evening meals in the patio, surrounded by flickering candles to set the mood! Bonus points if your candles look mega original and smell subtly fruity! ;)
A DIY Mojito Bar with Recipe & Free Printables
Something about a bar that make me all excited for a party! Be it a confetti bar , a waffles bar , or a cocktail bar . I think it's because 'bars' by definition are a fun place to hang out! And also because they're SO easy to set up! Guests serve themselves and all you do as the hostess is watch everyone interacting and join in the fun! And that, my friends; is the great start for any party! ;)
I think that's the tastiest post title we have EVER had here on the blog, am I right?! Churros take me right back to my childhood in Rio (no, not Mexico..) where we could buy them from street vendors filled with dulce de leche... (insert Homer Simpson-style drool noise) :p

I could eat Mexican food every day, and with Cinco de Mayo approaching gives me the perfect excuse to gorge myself on my fave fiesta recipes ;) You may remember the kiddies Pinata Party we styled a few years back? Well, this year I really wanted a more grown up vibe for our fiesta, complete with a Mojito Bar, which I'll share later in the week!
A Bright & Colorful Summer Party Fiesta
Fiestas are not only reserved for Cinco de Mayo. I personally, would have a fiesta any day of the week. Tacos, pinatas, Margaritas....the lot! So when my friend Gillian sent over her stunning party photos with a fiesta theme and get this, PINATA COOKIES (!!); I actually did a little dance. It's a softer take on the usually bright Mexican inspired theme. It has pastel colors and warm summer hues with a stunning watercolor cake, and I reckon it would be PERFECT for a seasonal wedding, bridal shower, dinner party or girly birthday!
