Ice cream season is here and we're all screaming for ice cream in our house! 😁 So I couldn't pass up the chance to turn one of my favorite cookies or biscuits into ice cream, hence this No-Churn Biscoff Cookie ice cream! I've discovered the Belgian Speculoos cookies or Biscoff as it's known in the US, when I moved to France, and I have been hooked ever since! The title of the post is a bit of a mouthful - in many ways than one! These candy-corn chocolate covered Oreo cookies are really simple to make (despite the long title). They look super fabulous as a Halloween gift, party favor, or desserts table treat. But most importantly, they taste absolutely scrumptious!! It's also a great recipe or Halloween project to make with the kids . I made them with my 6 year old, so if she can do this, then I'm sure anyone can! ;)

With the Jubilee weekend coming up on the 2, 3, 4 and 5th June, the UK will be coming together in celebration of the Diamond Anniversary of the Queen's Coronation 60 years ago! So I came up with a little twist on a traditional shortbread recipe for the Rule Britannia Party Shoot , that will easily dress up any home-made (or store bought) shortbread cookies!
I love thinking of fun, unique ideas and twists on popular birthday themes, and it was no different for my children this year - We always have a joint party as they were born on the same day but two years part, and the Barnyard Farm Theme was a perfect solution for their 5th and 7th birthday celebrations!
