Rainbow Cookie Cake Recipe

If you happen to have seen my last cookie cake recipe , you know how much I love making (and eating...) them! Cookie cakes have become my go-to dessert "centerpiece" for any festive occasion. Mainly due to their easy-to-make nature and the amount of fun they bring to any party table! Don't get me wrong, I love cake. But cookie cakes combine the best of the cookie AND cake world in one simple recipe! Hence my current obsession.

A Modern Plaid Tartan Christmas Table

A Modern Plaid Tartan Christmas Table

For Christmases past, I've done  modern monochromatic , trendy millennial  and  golden chic for my table decorations. So this year, I wanted to create something a little more traditional, and was inspired by tartan or plaid for my table design. Red is my favorite color, and I used it as a predominant shade in my holiday tablescape, alongside touches of green and gold for sparkle and a little modernity! Keep reading to see how you can re-create this look at home for the holidays!

This cookie cake is SO easy to make and combines the best of both cookie and cake worlds - buttery shortbread cookies, sandwiched together with chocolate cream cheese frosting, topped with ridiculous amounts of candy. Pineapple Cookie Cake

Pineapple Cookie Cake

Have you seen these amazing, trendy cream tarts in shapes of numbers and letters, taking over Instagram and Pinterest ?  Well, I personally like to call them "cookie cakes" instead because, well, they look like layered cake to me! They're basically two giant sugar cookies sandwiched together with some sort of frosting in the middle, and decorated on top with tons (and I mean tons) of candy, fruit, macarons, chocolate, edible flowers...you're only limited to your imagination when it comes to the decor of these cookie cakes!
