If you follow the blog, you probably have noticed the lemon themed posts lately , hence today's lemon shaped mousse. I made this mousse a few weeks ago in view of shooting it for the lemon party I shared last week . But this is one of those desserts that deserves its own post! This lemon and white chocolate mousse is so delicious, light and refreshing, not to mention super pretty due to its charming lemon shape. Therefore, I'm naming it "best dessert of the summer"! 😊

Well, I personally like to call them "cookie cakes" instead because, well, they look like layered cake to me! They're basically two giant sugar cookies sandwiched together with some sort of frosting in the middle, and decorated on top with tons (and I mean tons) of candy, fruit, macarons, chocolate, edible flowers...you're only limited to your imagination when it comes to the decor of these cookie cakes!
This recipe came about by accident, sort of. I was looking for a recipe online that I could make to use up all the blackberries I have growing in my garden. Eventually I found a simple enough cheesecake recipe and bought all the ingredients to make it, but on the day I decided to make it, the blackberries were not ripe yet! So, I swapped the blackberries for frozen summer berries (which I always have in the freezer), and it was a hit!
